Realistic Weekday Meals for Busy Families

If you want to make sure that your family are eating healthily, then you’ll be glad to know that this is easy to do. In fact, if you follow this guide, you’ll soon find that you can get most of these meals done in well under half an hour.

Sheet Pan Fajitas

If you don’t have time to prepare much in the way of your meals, then this is a very good meal. You just need to put peppers, some fajita seasoning, onions and minced steak into a sheet pan and grill it for around 10 minutes. You can swap the steak out for chicken if you want, or you can experiment by using shrimp. The great thing about this recipe is that you can prepare it in advance and then put it in the sheet pan whenever you’re ready to get cooking.

Parmesan Chicken and Broccoli

Vegetables taste way better when they have a dusting of parmesan cheese. The great thing about this recipe is that it doesn’t take long at all, and you can throw it all in the oven. Just take a chicken fillet, butterfly it and then coat it with a dusting of flour. When you have done this, you then need to put it in an egg wash before coating it in breadcrumbs. You can also add some parmesan to your breadcrumbs if you want. You can bake this on a tray, or if you want, you can shallow fry it. Either way, it’s a full meal done in well under half an hour. Want a fish alternative? Make this delicious baked cod recipe.

Mushroom, Spinach and Artichoke Pasta

Simply put your pasta into a pot of boiling, salted water. When you have done this, add your spinach, mushroom and artichoke. That’s right, it’s a one-pot meal, and the starch from the pasta will help to give the veggies that nice creamy texture. On top of this, the salt from the water also seasons your vegetables nicely. There’s almost no clean-up, and on top of that, you can add a grating of cheese to bring everything together. If you want more flavour, you can fry off your mushrooms and add them at the last minute.

Chicken Ramen

The ramen that you find packaged at the supermarket can easily be turned into a gourmet meal. You can add your favourite vegetables or protein if you want. If you really want to take things to that next level, add a soft-boiled egg. This will only take you 6 minutes, and you would be surprised at how much flavour it will add to the end dish.

Pulled Pork Sandwiches

Sure, pulled pork can take quite a while to cook, but at the end of the day, you can put it in your slow cooker as you go ahead and run your errands. When dinner time comes along, all you have to do is shred it and add some BBQ sauce. If you want to take things to that next level, then think about adding some apple slaw as well, as this will really bring everything together nicely.

Last week we tried out the fizzing sidewalk chalk- click here to read that review. This week it is liquid chalk spray.  They are a bit similar but yet different.  Here is how to make it: Supplies: 1 tsp. washable tempura paint 1 cup of hot water 1/2 cup of cornstarch squirt of dishwashing liquid 1 squirt bottle- I found them at the dollar store 1.  Add cornstarch to one cup of hot water whisking to mix so that there are no clumps. 2.  Add one teaspoon of washable tempura paint and a quirt of dishwashing liquid.  Mix well. 3.  Pour it into your squirt bottles and shake well. 4.  Go have fun!!!   This kept my daughters attention much longer the the fizzy chalk last week.  I also think this was easier to work with and just more fun in general.  I love seeing the chalk wet but then to see it dry.  I think it dried darker so it was fun to see the changes.  :)  Ready, Set, Go!  Have some fun! She is my little model... she kept saying "take my picture mom." She is like her

Toddler Rainbow Craft for St. Patricks Day

St. Patrick's day is March 17th so its approaching quickly.  I have a few ideas on art and food projects that i want to do with the kiddos.  Hopefully I will have enough time to complete them and share them with you.   This was a super easy one for those little hands.  I cut the stripes of colored paper but if you are working with a preschooler or school aged child then they can practice cutting.  The two toddler boys here only had to glue the pieces on their piece of paper.  EASY, but they enjoyed it!  :)  It sure has brightened my kitchen with them hanging on the fridge!  :)   I also talked more about the Promise God gave us with the rainbow since I know that history a whole lot better then the history of the Irish Holiday!
