Purple Potatoes

Why would April be posting this picture?  Well, many reasons actually!  First, I didn't even know there were purple potatoes, red yes, but when did purple happen?   Secondly, my husband has been doing some more cooking and this was a roast he made... which he also went to the store for and purchased these purple potatoes.   So I am so thankful and blessed to have a husband who will go get groceries anytime we need them, find new foods for us to try, and cook delicious foods!  So back to the purple potatoes... I think they have a more earthy taste and in a roast they are fantastic!   I think my husband found them in a package of small potatoes both purple and brown at Aldi's!
